Salads. My husband only rates them if they have loads of protein: nuts (tick), cheese (tick), and enough chicken (tick).
Quinoa, Chicken and Beetroot Salad has quickly become one of our favourites. It's perfect for those hot days. Fresh, tasty, light, yet substantial, describes this Gluten-Free meal.
The sweet roasted beetroot is offset by the salty, crumbly Fetta cheese. Balance is the key. You just want to keep eating this one with it's delicious mix of ingredients: herb-marinated chicken strips, quinoa, cashews, fetta cheese, fresh spinach and a balsamic dressing.

- Gluten Free. My Mum's GF. I'm not, but thankfully I had this yummy GF lunch that we both enjoyed.
- Picnic, Grab and Go. I literally threw two of these into a cooler bag with an ice-brick and wooden forks. I surfed with a friend, then provided a healthy, delicious lunch to go with our perfect ocean views. Spontaneous Fun!
- Beetroot: Boosts immune system and heart health. Beet fibres help reduce cholesterol. Reduces macular degeneration. High in Folate (reduces birth defects), Vitamin C, Fibre, potassium. Low in fat. Prevents skin, lung and colon cancers.
- Quinoa: Protein-rich food. It's a seed, but falls under a whole grain food. Has twice as much fibre as other grains. High in Iron, Magnesium, B vitamins, Potassium, Calcium. Low GI, so it's great for blood sugar control. It's a superfood, so it has anti-inflammatory, anti-viral, anti-cancer, anti-depressant effects.
